Spinach and persimmon salad


Ingredients

For the salad

  • 4-5 ounces baby spinach

  • 2 persimmons, sliced

  • 1/2 cup pomegranate seeds

  • 1/3 cup walnuts

  • 1/2 cup vegan feta

For the vinaigrette

  • 2 tbsp orange juice

  • 1/4 cup olive oil

  • 1 1/2 tbsp apple cider vinegar

  • 1 tbsp raw honey

  • 1 tbsp lime juice

  • Dash of cinnamon

  • Salt & pepper, to taste


Place the spinach, persimmons, pomegranate seeds, walnuts and feta into a large bowl.

  1. In a small jar, combine the orange juice, vinegar, honey, lime juice, cinnamon, olive oil, and season with salt & pepper. Seal tightly with a lid, then shake well until combined.

  2. Pour the dressing over the salad ingredients, then gently toss together gently.

  3. Top with the feta and walnuts and enjoy!
