Spinach and persimmon salad
Ingredients
For the salad
4-5 ounces baby spinach
2 persimmons, sliced
1/2 cup pomegranate seeds
1/3 cup walnuts
1/2 cup vegan feta
For the vinaigrette
2 tbsp orange juice
1/4 cup olive oil
1 1/2 tbsp apple cider vinegar
1 tbsp raw honey
1 tbsp lime juice
Dash of cinnamon
Salt & pepper, to taste
Place the spinach, persimmons, pomegranate seeds, walnuts and feta into a large bowl.
In a small jar, combine the orange juice, vinegar, honey, lime juice, cinnamon, olive oil, and season with salt & pepper. Seal tightly with a lid, then shake well until combined.
Pour the dressing over the salad ingredients, then gently toss together gently.
Top with the feta and walnuts and enjoy!
